The Spirit of the Season
This summer, our Head Chef has looked to the island’s past and its vibrant present to create a menu that feels both timeless and fresh. By blending the grand traditions of the European brasserie with the rugged beauty of our coastline, we’ve created a dining experience that is quintessentially Jersey.
This menu is a love letter to our local producers. My personal favourite is the Local Crab Salad—it’s simple, zesty, and exactly what summer in St Helier should taste like.
Harvested from Our Shores & Fields
Our ethos has always been to let the ingredients lead the way. This season, that means:
- The Land: World-class Jersey Royals and heritage vegetables,
- The Sea: Delicate Hand-Dived Scallops and the return of our iconic Jersey Rock Oysters,
- The Grill: Our signature aged steaks, reimagined with lighter, seasonal garnishes.
